I was born and raised here in North Carolina. In my early 20s I moved to San Diego and a couple of years later to San Francisco. While living in California people would always ask me where I was from (because no one is
from California). And when I would give my standard answer of "I grew up down south in North Carolina" a debate would ensue. The non-southerner would insist that North Carolina is not part of the south. So once I'd established that they weren't thinking of North
Dakota I would have to insist that North Carolina, despite its name, is, in fact, a southern state. It's below the Mason Dixon Line-- as are its neighbors to the north Virginia and Maryland-- it was on the Confederate side in the War of Northern Aggression, and most importantly, we North Carolinians consider ourselves to be Southerners, and we're not going to let anyone tell us any different.
The reason I'm telling you all of this is to establish my credibility as someone who knows her southern delicacies, not the least of which is a Moon Pie accompanied by an RC Cola. Seriously, there's even a
festival to honor the pairing. So I've created my own homage to the treat, A Moon Pie and RC Cola cupcake!
This is a Devil's Food cake (I've got a thing for Devil's Food) with Moon Pie and RC Cola mixed right in. The frosting is a Chocolate Marshmallow Butter Cream with a bit of RC Cola.
